Terrific Tuesday

Why is today so terrific - well, I got my stitches out yesterday!!!!! You know what that means - it means that for the first time in ten days, my armpit has actually seen soap and deodorant! And since Texas decided to pull a usual and heat up to 85 degrees yesterday in the middle of November, I am especially glad for my return to hygeine.

In other news, I am on a roll with my writing and actually got out ten pages this morning before work! Whoohoo! I think I've finally hit my stride.

In even other news, I lost 4 pounds last week on my first official "I'm no longer a traveling trainer" diet. Whoohoo times 2!

So in keeping with my new way of eating, I am looking for good recipes for easy stuff to cook. And casserole/crock pot dishes are especially appreciated. I am one of those people who can eat carbs/sugar, but not fat, so whatever the recipe, it should be low in fat or at least be able to be made that way (and still edible). So anyone got a good one-dish meal they can recommend?????

Hmm, this is kind of low in fat, and really easy to cook. Tortilla soup: 3 cans of low sodium chicken stock, one can tomato soup, pre-cooked shredded chicken all souped together in a crock pot for however long you need for it to cook. Then serve up the soup with shredded cheese, tortilla chips and avacado pieces. Easy, and tasty!

This depends on how you cook ... I throw things together until they look and smell right, so I can't give you measurements. But since I started on Weight Watchers (down 16 pounds at the last weigh in, WOOT!), I've pulled together a chicken teriyaki thing that's tasty and easy ...
Coat your big frying pan/wok with olive oil cooking spray. Brown cut up chunks of chicken tenderloin with garlic, salt, pepper, a little worcestershire sauce, and some ground ginger. Add sliced yellow onion and mushrooms and cook until onions are translucent. Add snow peas, green onions, and liberal amounts of teriyaki. Add a little olive oil and/or chicken broth if the pan is getting too dry. Let that simmer until the veggies are nice and steamy bright green. Dump in shredded cabbage (they make bag cabbage, just like bag lettuce, they just call is "coleslaw", in the produce section) and make sure it gets steamed but not too wilted. Then it's ready to serve. If you want a thicker sauce, make sure you have plenty of teriyaki and cooking juices going, maybe add a bit of chicken broth, and then add some whole ground oat flour to thicken things up, kind of like a roux. You can add a little butter, too ... This has the advantage of lots of tasty veggies, tender chicken, lots of taste, and it's low fat. You can use whatever veggies you like, I just mentioned the ones I like to include.

I will definitely try your recipe too. I am horrible about eating vegetables, but when they're lumped in and cooked with a meat, I tend to eat more. Thanks!
